Meatless Mondays: Pesto Barley with Mozzarella and Tomatoes Salad

I've had this recipe for awhile from Rachael Ray's magazine and have been trying to incorporate better grains into our dinners.  I made my own pesto (recipe here) for this recipe.  This is perfect for the main meal or as a side dish.  It definitely makes a lot, so cut it in half if you need to.

Today's Ingredients:
2 1/2 cups cooked and cooled barley
1 pint cherry tomatoes
6 ounces fresh mozzarella
1/2 cup pesto
3 tablespoons EVOO
1/4 teaspoon pepper.

Quarter your cherry tomatoes

Cut your cheese into small cubes.  If you only have regular
mozzarella it will work easily as well.

Whisk together your pesto, EVOO and black pepper.

Add your pesto mxiture to your barley.

Fold in your cherries and mozzarella.  Taste and add salt if needed.
