Today's Ingredients:
2 1/2 cups cooked and cooled barley
1 pint cherry tomatoes
6 ounces fresh mozzarella
1/2 cup pesto
3 tablespoons EVOO
1/4 teaspoon pepper.
Quarter your cherry tomatoes |
Cut your cheese into small cubes. If you only have regular mozzarella it will work easily as well. |
Whisk together your pesto, EVOO and black pepper. |
Add your pesto mxiture to your barley. |
Fold in your cherries and mozzarella. Taste and add salt if needed. |
